Easy Lemon Garlic Hummus


Looking for an appetizer that is easy, healthy and delicious?  Look no further!  Today we have Lemon Garlic Hummus.  Ready in minutes, this wonderful recipe features chickpeas, which are considered one of the world’s healthiest foods.  Chickpeas, (also known as Garbanzo beans),  contain fiber which helps to lower LDL cholesterol; these healthy beans  also contain protein; manganese, which helps to protect skin; zinc; copper; and helps to regulate blood sugar for those suffering with type 2 diabetes.  Chickpeas are also an important source of selenium, which is an important antioxidant and helps support liver function.  Also featured in this easy, healthy dish is fresh garlic (LOVE garlic-healthy and delicious, I use fresh garlic in many of my recipes).  Garlic is rich in vitamin C, Vitamin B6, and manganese.  To finish this off, we add olive oil and lemon juice, both very healthy.  Olive oil (the only oil that I use) is rich in monounsaturated fatty acids and a big component of the Mediterranean diet.  People from that region have longer life expectancies and lower risk of heart disease and stroke.  Lemon juice, packed with vitamin C, is another ingredient.  So, if you are looking for something fast, delicious and packed with vitamins, minerals and antioxidants, try Lemon Garlic Hummus!


Easy Lemon Garlic Hummus

3 15.5 oz. Cans Chickpeas (or Garbanzo Beans) drained

3 Cloves Fresh Garlic, cleaned and crushed

1/4 Cup Lemon Juice

1/2 Cup Olive Oil

Drain chickpeas and place in a food processor or blender.

Clean garlic and crush with a garlic press or the side of a knife and add to chickpeas.

Pour in lemon juice and olive oil.

Blend on high for 30 to 40 seconds or until smooth and creamy.

Serve with low salt tortilla chips or veggies.

This recipe makes 2 cups.
