Mother’s Day is in a few days! Are you excited? I mean, seriously, we finally get a day all to ourselves! (Yeah, right, you say!) Ok, well then there is no reason why we can’t enjoy a relaxing breakfast in bed prepared by our loved ones, right? This is a super easy muffin recipe that is nearly impossible to mess up! No Mom supervision required! (Maybe a little). All you moms go ahead and forward this to your children or significant other! Meanwhile, lay back in bed on Sunday morning and anticipate these easy, moist and delicious muffins that can be made in about 45 minutes! Easy, easy, easy! Not your basic banana muffin, not by any means! The strawberries add an unexpected taste treat that explode in your mouth with sweetness and flavor! I must humbly state that these are some of the best baked treats that I have ever come up with and I think that you will agree! All it takes is a few ripened bananas, one cup of strawberries (frozen work very well in this recipe, just let thaw for about 20 minutes, slice and drain), brown and white sugars, vanilla, one egg, a bit of butter, baking powder, flour and that, my friends, is it! What better way to celebrate Mother’s Day than by breakfast in bed? Don’t we all deserve that on our special day? And what better breakfast than homemade muffins and a cup of coffee or tea? Strawberry Banana Mother’s Day Muffins
2 Cups Flour
1 Teaspoon Baking Powder
1/2 Cup Butter
1/2 Cup Brown Sugar
1/2 Cup Sugar
1 Teaspoon Vanilla
3 Ripe Bananas, crushed
1 Cup Strawberries, sliced (frozen work well, just let thaw for about 20 minutes, drain and slice)
Heat oven to 350 degrees.
Mash bananas in a medium sized bowl and set aside.
Beat together butter and sugars. Beat in egg.
Sift together flour and baking powder. Add to butter/sugars/egg mixture. Beat well.
Fold in mashed bananas and sliced strawberries.
Grease 12 muffin tins or use paper liners. Fill tins right to the top with batter.
Bake at 350 degrees for 25 minutes or until toothpick inserted in a muffins comes out clean.
